Dan ChaA native Chicagoan, Dan acquired his curiosity of cooking through the latter of youth. Growing in a formative culinary setting, he made his way to study at the Culinary Institute of America in 2007. Europe, San Francisco and other markets led to a unique lens of identity that has propelled his vision of cuisine into a colorful array of Chicago establishments - Purple Pig, Custom House, Blackbird, and Entente. A strong believer in cultural identity, he sought to contribute to the dialogue of an inspiring culinary community. Scaling his skill set through a spectrum of contribution and collaborations, Dan uses cuisine as a canvas to present options over obstacles.
Alison Cates Originally from rural New Mexico, Alison discovered her culinary acumen through the background of her parents rooted in the southwest. Through Mexican heritage and middle eastern influence, Alison discovered a perspective of cuisine that reflected her roots while exploring curiosities of other cultures. Officially embracing culinary during her time in Salt Lake City, Alison found her way to Chicago to fully immerse herself within the world of notable establishments. Growing through the kitchens of Longman & Eagle, Perennial Virant, and Sepia - Alison was recognized at the Jean Banchet Awards for her excellence in the culinary arts. Earning the coveted title of Rising Pastry Chef for 2017, Alison helms the pastry program at Marisol within the acclaimed Museum of Contemporary Art in Chicago.
