With the next chapter of F A U N A, we are excited to explore the bounty of the upcoming winter season. Similar to dinners we have done in the past where we have collaborated with venues and different storytellers - we are inspired by the more challenging flavors as fall transforms into winter. Through a 9 course menu progression, F A U NA uncovers seasonal gems utilizing fermentation, pickling, and ash baking techniques. Elevating root vegetablews, our next engagement appropriately explores the stories that "Live Beneath the Frost".
